Jessica Mack is a certified therapist who always considered helping people as her life purpose. Due to her illness, she had to quit her job and retire early. Sure, this seemed like a closing of a chapter for her, but in her heart, she was ready to begin a new one where she would thrive. As they say, you are just a decision away to live a beautiful life. She decided to unleash her creative side and that led to the birth of her blog – More than a meatless Monday.

More than a meatless Monday is thriving currently and Jessica is worked consistently hard to reach this point. Jessica creates meatless dishes for both vegetarians and meat-eaters alike. In Jessica’s opinion, preparing meatless food is both fun and easy. Even if you eat meat on daily basis down, it doesn’t mean you can’t enjoy delicious meatless meals like quinoa vegetarian chilli, spaghetti squash primavera, or chocolate chip banana nut muffins.

Jessica loves to demonstrate her amazing culinary skills and sharing about her healthy lifestyle. She is media trained and is available for live cooking demonstrations and podcasts, radio shows, or television segments. Jessica made appearances on the Katie Couric Show, Dr Oz Show, and Sirius XM’s The Doctors Show.

Not only is Jessica an excellent chef (she’s currently enrolled as a student in a prestigious culinary school), but she also knows how to take stunning pictures of food. Her photography skills have made her blog one of the best to refer to if you are searching for vegetarian options. In addition to improving her culinary techniques, Jessica is learning to improve her food styling and also is actively learning about the things she already knows like photography. To succeed you need to be a learner and the more you learn the better. Once you develop an ‘I know everything’ attitude, the downfall starts.
